This coffee is a naturally processed coffee, which in itself is one of our favorite ways of having coffee delivered from the farm. Natural process means that the coffee is laid out to dry with the entire fruit intact, imagine drawing fruit or raisins more commonly. After X amount of time, decided by the farmer, the coffee is then depulped hulled and then washed. The green coffee doesn't look green, it looks yellowish kind of almost light brown and that is due to the sugar content that is still left on the green seeds, your coffee.
When we roast a coffee that is treated this way we are presented with more natural flavors coming from that origin. For example if a natural process Ethiopia is presented, expect lots of blueberry notes and soft chocolate. If it's a natural from Brazil and expect extremely nutty and very chocolatey. In this case a coffee from Mexico that is naturally processed would most likely have more Bakers chocolate, date and raisin flavors, and a little bit of fig going on.
Now comes the fun part this is the first time that I have seen a naturally processed Mexican coffee from Veracruz and our favorite way of decaffeination, E. A.
Ethyl acetate is a natural fermentation occurring when sugar cane is present in the fermentation of process. That's a lot to, process. Basically sugarcane allows for an ethyl acetate reaction to occur rejecting all the coffee flavor and just pulling out the caffeine, what does that mean for you?! It means that you get delicious delicious coffee!
Long story short, and all tariffs aside, we will continue to find copies that are just Exquisite and tasty, because why not share what the Earth has to provide with our guests!?!
This is the best decaf we have had in our Myriad life and you might have a couple of customers asking you excuse me, I ordered decaf. This is regular, and you can turn around probably and say that is decaf sweetheart, it's just that good!. Decaf never tasted this good. E.A. helps keep the flavors of the coffee intact without imparting sugar sweetness. Having this coffee decaffeinated at the farm, allows the farmer to repurpose the water into other crops! Decaf still has about 4% caffeine so you can allow yourself a second “second cup”. On a lighter dose 18 grams :Butterscotch, cinnamon, tangerine and everything nice and on a heavy yet healthy 20 gram dose, bakers chocolate and cinnamon graham cracker.
